Mashed Potato

This week you student made Mashed Potato.

Ingredients:

Serving Sizes::
 Servings for 5-6 people
  1. 1 1/3 cups water
  2. 1/2 tsp salt
  3. 2 tbsp butter
  4. 2/3 sup milk
  5. 1 1/3 cup potato flakes
 Servings for 7-8 people
  1. 2 2/3 cups water
  2. 1 tsp salt
  3. 4 tbsp butter
  4. 1 1/3 sup milk
  5. 2 2/3 cup potato flakes
 Instructions:
  1. Combine water, salt and butter
  2. Heat to a boil, remove from heat
  3. Add cold milk
  4. Stir in potato gently
  5. Let stand until moist, then whip lightly with fork
Class responses:
Some of the younger kinds though that they were good and vary fluffy.

Potato Pancake

This week you student made Potato Pancake.

Ingredients:

Pancake mix
Potato flakes
Salt
Buttermilk
Eggs
Low fat milk
Vegetable oil
Baking soda
Sugar

Instructions:
  1. 3/4 cup Pancake mix
  2. 1/2 cup Potato flakes
  3. pinch of Salt
  4. 3/4 cup Buttermilk
  5. 1 tbsp Sugar
  6. 1 1/2 Baking soda
  7. 1 Egg
  8. 1 1/2 tbsp Vegetable oil
  9. 1/4  Low fat milk
Class responses:
Some of the younger kinds though that they were good and vary fluffy.

Pizza Bagels

This week you student made Pizza Bagels.
Ingredients:

Plain Bagels
Pepperoni
Pizza Sauce
Mozzarella Cheese

Instructions:
  1. Cut 1/2 bagel place on a plate
  2. Spread pizza sauce on the top of the bagel
  3. Sprinkling a tablespoon of cheese on the pizza sauce
  4.  Put 2 pepperoni (If wanted)
  5. Toast in a toasted oven till the cheese is melted
Class responses:
The younger kids though it was good. Some of them thought it needed some salt, some more flavor and one said "a good Italian food".

Fries

This week you student made fries from scratch.
Ingredients:

Idaho Potato russet
Canola Oil (Healthy choice peanut oil)
Kosher Salt

Instructions:
  1. Wash the potato
  2. Peel and cut the potato into french fries pieces
  3. Soak raw potato in hot tap water for 10 minutes and pat dry
  4. Fry the potato (per the instructions of the fryer used) 
  5. Eat and enjoy
Class responses:
A student from Mrs. L's class said that they were good. He think that they were fryed for the right amount of time. Since of how fresh they were he thinks that they were as good as In N Out's fresh cut fries. Mrs. Dona started that they were the best fries shes ever had.

Hummus

This week your student made hummus.


Ingredients:

1 can garbanzo beans
1 Tbs lemon juice
1 Tbs olive oil
1 crashed garlic clove
1/2 tsp cumin
1/2 tsp salt

Instructions:
  1. blend all ingredients together in a food processor until smooth
  2. cut your choice of veggies
  3. serve into dishes of your choice
Class responses:
 A staff from Mrs. L class really liked the creaminess of the hummus. She also thought the hummus had great garlic taste. She appreciated the veggies that were on the side.

Smoothies

This week your student made smoothies.

Ingredients
5 strawberries
10 blueberries
1/2 banana
3/4 cup orange juice
3/4 cup yogurt
2 cup ice

Instructions
  1. cut strawberries into small pieces and cut the stems off
  2. slice the banana
  3. measure 3/4 cup orange juice and yogurt into a blender
  4. measure 2 cup ice into the blender
  5. blend all ingredients until smooth
This week we had an observer from SDSU try the smoothies. She liked the cold and fruity taste of the smoothies.

Pumpkin Chocolate Chip Energy Balls

This week your student made Pumpkin Chocolate Chip Energy Balls. The following recipe comfortably makes 14 energy balls.

Ingredients
3 cups dry, uncooked oatmeal (We used gluten-free cut outs)
1 cup all-natural Pumpkin Pure
1 cup all-natural Peanut butter, or Almond butter
2/3 cup pure maple syrup or raw honey
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 Tbsp vanilla extract
4-6 Tbsp sunflower seeds (if 'dough' seems too wet, then add more ground flax, if it's too dry, add less
1/2 Cup mini dark chocolate

Instructions

  1. Combine all ingredients together in a medium bowl until thoroughly mixed
  2. Roll into ball of about 1" in diameter. Chocolate Chip Energy Balls
  3. Place on a cookie sheet covered in parchment paper & freeze one hour
  4. Store in an airtight container and keep refrigerated for up to 1 week

Luster's room: The staff in her room thought it was good but would suggest a different type of nut than sunflower seeds.
